چکیده
Brewing industry is one of the most progressive and dynamically developing areas food beverage in world. In Kazakhstan brewing currently developed segment market. recent years, production capacities have been increasing, range products has expanding, craft developing. Non-alcoholic beer becoming more popular. The technology carried out two ways - it dealcoholization finished drink, or a change technological processes production. presented article, possibility preparing low-gravity wort fermenting with various strains yeast for preparation non-alcoholic investigated. characteristics three types used low-alcohol drinks, fermentation activity absorption solids during were studied. It established that strain Saf Brew TM LA-01 lowest degree suitable beer. mode post-fermentation selected, as result which content ethyl alcohol does not exceed 0.5 vol.% contains by-products quantities corresponding to standards.

Utilization of Wort Fatty Acids by Yeast During Fermentation
Uniformly labeled C-palmitic, oleic, and linoleic acids were used individually to trace wort fatty acids in ale yeast fermentations. Fatty acids extracted from the resulting beers were analyzed by gas-liquid chromatography with concurrent radioactivity monitoring. Lipid components extracted from the harvested yeast were separated by thin-layer chromatography, and the fatty acyl residues of thes...
متن کاملAlternative Saccharomyces interspecies hybrid combinations and their potential for low‐temperature wort fermentation
The lager yeast hybrid (Saccharomyces cerevisiae × Saccharomyces eubayanus) possesses two key characteristics that are essential for lager brewing: efficient sugar utilization and cold tolerance. Here we explore the possibility that the lager yeast phenotype can be recreated by hybridizing S. cerevisiae ale yeast with a number of cold-tolerant Saccharomyces species including Saccharomyces arbor...
متن کاملAccelerated Fermentation of Brewer's Wort by Saccharomyces carlsbergensis.
A rapid procedure for wort fermentation with Saccharomyces carlsbergensis at 12 C is described. Fermentation time was reduced from 7 to 4 days with normal inoculum by shaking. Increasing the inoculation to 5 to 10 times normal and shaking resulted in complete fermentation in 3 days. Maximum yeast population was reached rapidly with the large inocula, but fermentation proceeded at approximately ...
متن کاملEffect of low-temperature fermentation on yeast nitrogen metabolism
The aim of this study was to analyse the influence of low-temperature wine fermentation on nitrogen consumption and nitrogen regulation. Synthetic grape must was fermented at 25 and 13 C. Lowtemperature decreased both the fermentation and the growth rates. Yeast cells growing at low-temperature consumed less nitrogen than at 25 C. Specifically, cells at 13 C consumed less ammonium and glutamine...
